Vegetable Oils

Vegetable oils are extracted from the seeds, kernels or fruit of a plant. There are several methods of extraction. Cold Pressed- The fruits, nuts or kernels are pressed in a big grinder. No heat is used. This is method is preferable, as the oil produced though in smaller quantities is exceptional. Hot Pressed-The kernel, nuts or seeds are pressed and heated (sometimes up to 200°C) either before or after being pressed. This method produces a bigger quantity of oil,but the esssential fatty acids and other active ingredients are destroyed by the heat and generate free radicals. It produces an oil less nutritive, but more stable. Solvent extraction- Seeds or kernels are pressed with a solvent to extract the oil.The oil then undergoes other refinement processes to eliminate the solvent from the oil. We select only the finest oils, preferably organic and/or fairtrade. We advise our clients to keep their oils in amber glass bottles, preferrable in the fridge (exceot for Olive and Jojoba) if not in a cool, dark place.
